Want something sweet but healthy and nutritious all at once? I present you with my version of the Everything Cookie!
Years ago a neighbour and dear friend shared her very unhealthy but still delicious recipe with me. I've gone and modified it to my liking and with better alternatives for my families health.
The least fancy recipe to date but one that is a favorite in our home. You can substitute dry ingredients for whatever you can imagine if you like. This isn't a recipe that's complicated in the slightest and you can absolutely get creative with it!
Cari-Lee's Everything Cookie Recipe
Preheat oven to 375 ° F
1 1/2 cups organic coconut oil or butter
2 cups brown sugar (demmererra)
2 teaspoons premium organic vanilla extract
4 whole eggs
2 heaping cups organic white flour
2 level cups organic whole wheat flour
4 teaspoons baking soda
1 teaspoon salt
3 cups organic oats
1/2 cup organic unsweetened coconut
1 1/2 cups dried apricots (chopped)
1 cup dried cherries
1 cup chopped pecans or walnuts
1/2 cup golden raisins
1/2 cup organic dark chocolate chips
1/2 cup pumkin or sunflower seeds
***Feel free to switch out whatever you want. Don't like raisins but love dried cranberry? Go for it! You have heaps of options if you want to change something out don't be shy and certainly don't let fear hold you back. Don't want chocolate? Don't use it! You can even add some peanut butter to the mix if you like!
Cream the oil/butter and sugar.
Add the vanilla and eggs.
Next, the flour, baking soda and salt.
Add in the granola and oatmeal.
Fold in the apricots, cherries, pecans and raisins chips, seeds, etc.
With two spoons, drop onto cookie sheets and bake for 12 to 14 minutes depending on your oven.
Cool on a rack.
Recipes are going to vary from meals to medicines. It's all about healing from the inside out because we truly are what we eat. What's the point? Well, gardening and foraging for your own foods, shopping local and no processed garbage or pharmaceuticals for what ails you? I think that's enough of point, don't you?
